Cream of Wild Mushroom Keto-Modified Bone Broth

 

PREP TIME: 10 MINUTES COOK TIME: 45 MINUTES Makes eight 1 cup portions

Ingredients:

  • 2 teaspoons of ghee
  • 1 cup of finely chopped onion
  • 1/2 cup of celery, chopped
  • 1/4 teaspoon of red pepper, ground
  • 1 large clove garlic
  • 6 ounces of shiitake mushrooms
  • 9 ounces of cremini mushrooms
  • 6 ounces of white mushrooms
  • 2 teaspoons of fresh thyme/ 1 teaspoon dried
  • 1 teaspoon of Celtic or pink Himalayan salt
  • 1/2 teaspoon of ground black pepper
  • 6 cups of Chicken Bone Broth or Beef Bone Broth
  • 2/3 cup of coconut milk

 

Directions:

Melt the ghee in a large pot over medium-high heat.

Add in your onion, celery, and red pepper.

Stir frequently, for approximately four minutes, or until your veggies are soft.

Add in your garlic and cook for an additional 30 seconds. 

Slowly mix in the shiitake mushrooms, 6 ounces of the cremini, the white mushrooms, thyme, salt, and black pepper.

Continue to cook while frequently stirring, for 7 to 10 minutes, or until the mushrooms begin to soften.

Add in your broth and bring your pot to a boil.

Reduce the heat to medium-low immediately.

Simmer uncovered, stir occasionally, for 15 minutes.

Remove the pot from heat.

Add in the coconut milk and 3 ounces cremini mushrooms.

Puree with a handheld immersion blender, food processor, or blender, in small batches. Return to the pot and simmer for approximately 10 minutes.
