Total Time: 10 minutes (10 minute prep time)

Ingredients:

Raspberry Layer: 

1 cup frozen raspberries

1 cup unsweetened coconut milk 

1 tsp granulated monk fruit

½ tsp pure vanilla extract

¼ cup chia seeds

Chocolate Layer: 

1packet of Dr. Kellyann's Super Chocolate Smoothie

1 cup unsweetened coconut milk 

¼ cup chia seeds

Toppings:

Fresh raspberries

Raw Coconut Chips

Raw Cacao Nibs

Directions:

Blend all the ingredients for the raspberry layer together, excluding the chia seeds. Whisk in the chia seeds, then refrigerate for at least 1 hour, or overnight.

For the chocolate layer, whisk all ingredients together and similarly leave to refrigerate for at least 1 hour, or overnight.

Once the layers have thickened to a pudding-like consistency, assemble the parfaits by starting with a layer of the chocolate pudding, followed by the raspberry pudding. Top with fresh raspberries, raw coconut chips, and cacao nibs.
