Valentine Chia Pudding Parfaits

These Chocolate Raspberry Chia Pudding Parfaits are a creamy, nutrient-packed twist on classic indulgence, featuring antioxidant-rich raspberries, protein-powered chia seeds, and the decadent chocolatey goodness of Dr. Kellyann’s Super Chocolate Smoothie. Made with low-lactose whey protein isolate, hydrolyzed collagen, prebiotic fibers, healthy fats, detoxifying veggies, and berries, this parfait fuels your body while satisfying your sweet tooth.

    Whip up these parfaits in minutes, layer them with your favorite toppings, and enjoy a dessert that loves your body back!

    Serves: 4

    Total Time: 10 minutes (10 minute prep time)

    Ingredients:

    Raspberry Layer: 

    1 cup frozen raspberries

    1 cup unsweetened coconut milk 

    1 tsp granulated monk fruit

    ½ tsp pure vanilla extract

    ¼ cup chia seeds

    Chocolate Layer: 

    1packet of Dr. Kellyann's Super Chocolate Smoothie

    1 cup unsweetened coconut milk 

    ¼ cup chia seeds

    Toppings:

    Fresh raspberries

    Raw Coconut Chips

    Raw Cacao Nibs

    Directions:

    Blend all the ingredients for the raspberry layer together, excluding the chia seeds. Whisk in the chia seeds, then refrigerate for at least 1 hour, or overnight.

    For the chocolate layer, whisk all ingredients together and similarly leave to refrigerate for at least 1 hour, or overnight.

    Once the layers have thickened to a pudding-like consistency, assemble the parfaits by starting with a layer of the chocolate pudding, followed by the raspberry pudding. Top with fresh raspberries, raw coconut chips, and cacao nibs.
