Patriotic Protein Parfait

    I was craving something sweet but want to keep it high-protein, low carb, and gut-friendly. I came up with these Protein Parfaits and they ended up being the perfect treat.

    Ready in 20 minutes or less, each parfait layers silky coconut yogurt boosted with my vanilla bone broth protein, a bright, tangy raspberry chia jam, and fresh blueberries for the ultimate finishing touch. It’s proof that you can whip up a beautiful, satisfying treat without spending hours in the kitchen — and without all the sugar. 

    Serves: 2 Total Time: 20 minutes (10 minute prep time, 10 minute cook time)

    Ingredients:

    Vanilla Bone Broth Protein Yogurt Layer:

    2 cups unsweetened coconut yogurt

    1 scoop Dr. Kellyann Vanilla Bone Broth Protein Powder

    Raspberry Chia Jam:

    2 cups frozen raspberries

    2 tbsp chia seeds

    Juice of 1 lemon

    Toppings:

    Fresh blueberries

    Lemon Zest

    Directions:

    In a medium saucepan over medium heat, cook the raspberries for 5–10 minutes, lightly mashing as they soften. Stir in chia seeds and lemon juice. Continue cooking on low until thickened and gel-like. Remove from heat and let cool.

    In a bowl, mix the coconut yogurt with the bone broth protein powder until smooth.

    To assemble, spoon the cooled raspberry chia jam into the bottom of a glass or jar. Layer with the protein yogurt mixture, then top with fresh blueberries and lemon zest. Serve and enjoy!
