Greek Lemon Chicken Kabobs
Bone broth isn't just for soup season. One of my favorite ways to enjoy it during the warmer months is by adding it to marinades, and these Greek Lemon Chicken Kabobs are the perfect example. Fresh lemon, oregano, olive oil, and Dr. Kellyann Greek Lemon Bone Broth come together to create a flavorful marinade that helps keep the chicken juicy and tender while adding savory depth. Threaded onto skewers with colorful vegetables and grilled until perfectly charred, these kabobs are packed with protein and Mediterranean-inspired flavor. Serve them with a side of tzatziki, a fresh salad, or grilled vegetables for an easy summer meal that's both delicious and nourishing.
Serves: 4-6 Prep time: 30 minutes Cook time: 10 minutes
Ingredients:
1 LB chicken breasts, cut into cubes
1 red pepper, cut into 1-inch pieces
1 zucchini, cut into 1/2 -inch pieces
½ red onion, cut into 1/2 -inch pieces
Marinade:
4 TBS olive oil
4 TBS Dr. Kellyann Greek Lemon Bone Broth
1 lemon, juice and zest
1 TBS oregano, freshly chopped
½ tsp sea salt
½ tsp black pepper
Directions:
Combine all marinade ingredients in a mixing bowl.
Add chicken pieces and marinate for at least 30 minutes or up to 2 hours.
Remove from the refrigerator and begin assembling the kabobs by alternating vegetables and chicken on skewers.
Grill over medium heat, cooking the chicken for about 3-4 minutes on each side. Ensure it reaches an internal temperature of 165°F before serving.
