Tuscan Tomato Gazpacho Soup

Ingredients:
4 tomatoes, diced
1 cucumber, peeled & diced
1/3 C red onion, diced
4 cloves of garlic, smashed
½ red pepper, diced
½ tsp sea salt
½ tsp smoked paprika
1 TBS Dr. Kellyann Tuscan Tomato Bone Broth powder
¼ C olive oil
1/3 C red wine vinegar
Garnish with basil and extra olive oil (optional)
Directions:
Combine all ingredients into a mixing bowl and toss until combined. Refrigerate for at least 20 minutes or until chilled. Once chilled, place all ingredients into a food processor or high-powered blender and blend until well combined (about 1-2 minutes). Strain ingredients to remove pulp.
Serve chilled and garnished with extra olive oil and basil.
