Birthday Protein Cake Pops

My incredible team spoiled me with these surprise Birthday Protein Cake Pops! They’re adorable, festive, and pack 5g of protein EACH thanks to my Vanilla Bone Broth Protein. Proof you can celebrate and still nourish your body. That’s how we do it around here! Yes, you can have your cake (pop) and eat it too!

Yields: 8 Bites Total Time: 40 minutes (20 minute prep time, 20 minutes freeze time

Ingredients:

Cake Pops:

½ cup unsweetened coconut yogurt, as needed for a firm dough consistency

1 cup almond flour

1 scoop Dr. Kellyann’s Vanilla Bone Broth Protein

1 tsp pure vanilla extract

White Chocolate Layer:

1 cup white chocolate

2 tsp coconut oil

Dye-free rainbow sprinkles

Directions:

Whisk together all of the ingredients for the cake pops until an even dough consistency has been achieved. Roll the dough into balls of 1” diameter, and place a cake pop stick in the center of each. 

Line the balls on a sheet of parchment paper and place to freeze for 10 minutes. 

While the bites freeze, whisk together the white chocolate and coconut oil until smooth. Dip each cake pop into the chocolate, and add a pinch of sprinkles onto each pop. Line the pops on the cake pop stand and place to freeze until the chocolate has set. 

To store, refrigerate in an airtight container.
