Watermelon Popsicless

    Ingredients:

    • 2 ¾ cups watermelon, cubed
    • 1 kiwi, sliced
    • 1 nectarine or peach, sliced
    • 1 - 2 scoops Dr. Kellyann's Complete Collagen Protein
    • 1/4 cup Coconut Kefir
    • 1/8 - 1/4 cups water
    • Optional:
      • 1 to 2 tbsp honey, maple syrup, or coconut sugar as needed (optional)

    Directions:

    Add watermelon, nectarines/peaches and optional honey into a blender, blend until smooth. Strain into a bowl to remove any seeds/pulp. Combine the juice with Collagen Protein. Once combined, fill popsicle molds of your choice about 3/4 of the way with the mixture and freeze.

    Once the watermelon layer is frozen, remove from freezer. Top the watermelon layer with a splash of coconut kefir. Freeze and let new layer set.

    In the meantime, add kiwis into a blender with 1/8-1/4 cup of water to establish a smooth/watery consistency, not chunky. Add this layer on top of the kefir layer and freeze once more. Enjoy!

     

    Pro-tip: Use wooden popsicle sticks and not the plastic ones from the mold to ensure a firmer hold in the popsicle.
