PREP TIME: 10 MINUTES | COOK TIME: 45 MINUTES
Makes eight 1-cup portions
- 2 teaspoons of ghee
- 1 cup finely chopped onion
- 1/2 cup celery, chopped
- 1/4 teaspoon red pepper, ground
- 1 large clove garlic
- 6 ounces shiitake mushrooms
- 9 ounces cremini mushrooms
- 6 ounces white mushrooms
- 2 teaspoons fresh thyme/ 1 teaspoon dried
- 1 teaspoon Celtic or pink Himalayan salt
- 1/2 teaspoon ground black pepper
- 6 cups Chicken Bone Broth or Beef Bone Broth
- 2/3 cup coconut milk
- Melt the ghee in a large pot over medium-high heat.
- Next, add in your onion, celery, and red pepper. Stir frequently, for approximately 4 minutes, or until your veggies are soft.
- Add in your garlic and cook for an additional 30 seconds.
- Add the shiitake mushrooms, 6 ounces of the cremini, the white mushrooms, thyme, salt, and black pepper.
- Continue to cook while stirring, for 7 to 10 minutes, or until the mushrooms begin to brown.
- Add in the broth and bring your pot to a boil. Reduce the heat to medium-low immediately.
- Simmer uncovered, while stirring occasionally, for 15 minutes, or until the mushrooms are softened.
- Remove pot from the heat. Add in the coconut milk and 3 ounces cremini mushrooms.
- Puree with a handheld immersion blender, food processor, or blender in small batches. Return to the pot and simmer for approximately 10 minutes.
