Healing Shiitake Mushroom Soup
As the chill of the colder months sets in, there's nothing quite as comforting—or nourishing—as a bowl of Healing Shiitake Mushroom Soup. This rich, flavorful soup combines the immune-boosting power of shiitake mushrooms with the warmth of a homemade broth, making it a perfect go-to remedy for soup season.

Ingredients
- 1 ounce dried or fresh shiitake mushrooms
- 1/4 cup celery, chopped
- 1-3 cups very warm brewed green tea (see notes)
- 1 medium white onion, quartered and thinly sliced
- 3 cloves garlic, chopped
- 2 tablespoons chopped fresh ginger
- 1 teaspoon finely chopped fresh turmeric or 1/2 teaspoon ground turmeric
- 4 cups (1 quart) Dr. Kellyann's Bone Broth
- 1 tablespoon coconut aminos
- 1/2 tablespoon coconut vinegar or white wine vinegar
- 2 cups thinly sliced napa cabbage, kale or any leafy greens
- 1/4 cup scallions, white and green parts, sliced
- 1 tablespoon seaweed flakes
- 1 tablespoon of coconut, olive or avocado oil
Directions
If using dried shiitake mushrooms, rinse the mushrooms and add to a small bowl to soak in the warm brewed green tea for 15 to 20 minutes, or until soft.
While these are soaking, heat 1 tablespoon of oil to the pot. Add the celery, onion, garlic, ginger, and turmeric and cook until soft. (if using fresh mushrooms, add them here too.)
Add the 4 cups of Dr. Kellyann's Bone Broth. (If using dried mushrooms add the mushrooms and green tea soaking liquid to the pot and bring to a boil over high heat. If using fresh, add in 1 cup brewed green tea.)
Immediately reduce the heat to medium, add the coconut aminos, vinegar, and leafy greens, and simmer for about 10 minutes.
Serve with a sprinkling of scallions and seaweed flakes.
