Quick & Easy Lox

    Though it's usually served on a carb-loaded bagel with cream cheese, lox can make an amazing low-carb, high-protein breakfast too! This Quick & Easy Lox recipe is served on bibb or iceberg lettuce with savory capers, sweet tomatoes, and crunchy red onion. 

    Ingredients

    • 3-4 ounces lox
    • 1 ripe tomato, sliced
    • Several thin slices red onion
    • 1-2 teaspoons capers, drained and rinsed
    • Bibb or romaine lettuce leaves
    • Dill (optional)
    • Lemon

    Directions

    Serve lox on lettuce leaf (or as a roll-up!) with tomato, red onion and capers. If desired, sprinkle with fresh dill, and/or spritz with fresh lemon juice.
