Paleo Tropical Trail Mix

I usually keep an easy-to-eat snack in my purse if I want something when I’m on the run or if I’m out with the kids and they get hungry. I’ve combined three of my tropical favorites: coconut, pineapple, and macadamia nuts, along with some dark chocolate and almonds for a sweet and salty treat full of the healthy benefits in coconut, dark chocolate, nuts, and fruit.

 

Prep time: 10 min • Cook time: 10 min • Yield: about 4 ½ cups

Ingredients

  • 2 ½ cups coconut chips
  • 1 cup dark chocolate chunks or chips
  • 1 cup dried pineapple chunks
  • 1 cup macadamia nuts
  • 1 cup almonds
Directions
  1. Preheat oven to 350º F. Spread coconut out evenly on a sheet pan and bake for 8 – 10 minutes until it begins to brown. Remove and let cool.
  2. Mix together all ingredients except coconut. When coconut is cool, toss into the mix. Store in a sealed container.
