
Bone Broth Butternut Squash Mac & Cheese
When my boys were little, mac & cheese was the ultimate comfort food request. And honestly —what’s better than a warm, creamy bowl of cheesy goodness? But as a mom (and a health and wellness expert), I wanted to give them something just as delicious, but way more nourishing for their growing bodies. That’s when I got creative in the kitchen, and this Bone Broth Butternut Squash Mac & Cheese was born!
It’s still a favorite in my house today—packed with protein, gut-loving ingredients, and that signature cheesy flavor (without the dairy!). The secret? A velvety butternut squash sauce blended with my Classic Chicken Bone Broth, then topped with a rich macadamia parmesan that adds the perfect savory bite. Trust me, once you try this, you won’t miss the boxed stuff one bit!
Serves: 4 Total Time: Approximately 50 minutes (20 minute prep time, 30 minute cook time)
Ingredients:
Bone Broth Butternut Squash Sauce:
2 tbsp extra virgin olive oil (for roasting)
1½ cups butternut squash, cubed
¼ sweet onion
4 garlic cloves, peeled
½ cup raw macadamia nuts
3 tbsp nutritional yeast
2 tbsp unsweetened coconut yogurt
1 packet Dr. Kellyann’s Classic Chicken Bone Broth
½ tsp ground turmeric
¼ tsp ground black pepper
Juice of 2 lemons
1 tbsp coconut aminos
1 cup macadamia milk
Macadamia Parmesan:
½ cup raw macadamia nuts
¼ cup nutritional yeast
½ tsp garlic powder
To Serve:
Noodles of choice (my favorites are vegetables, grain-free pasta like Capello's or Jovial or chickpea noodles)
Fresh herbs of choice, roughly chopped
Directions:
Preheat the oven to 400°F and line a large baking tray with parchment paper. Toss the cubed butternut squash and onion in the extra virgin olive oil, then spread them out on the tray to roast for 20-25 minutes, or until the butternut squash is tender and can be pierced with a fork.
Once roasted, allow the vegetables to cool completely. Once cooled, blend with the remaining sauce ingredients until smooth and creamy. Taste, and if desired adjust with additional seasonings and spices.
Cook your noodles of choice according to the package instructions.
While the noodles are cooking, prepare the macadamia parmesan by blending all the ingredients together until a crumbly, even consistency has been achieved.
Once the noodles are done, strain, and toss with the sauce to coat evenly. Finish to serve with a sprinkle of the macadamia parmesan and some freshly chopped herbs of your choosing.
To store, refrigerate in an airtight glass container.
